Creamy Mushroom Soup

CREAMY MUSHROOM SOUP
INGREDIENTS:
* 300gm- mushrooms (chopped)
* 1-onion (big one sliced)
* 1cup- milk
* 2cups- chicken stock or vegetable Stock
* 2tbs- cornflour
* ½cup- cream
* 90g- butter
* Salt and pepper according to taste
METHOD:
* Melt butter in a pan over the medium heat. Add onions and mushrooms to the butter and fry for 4 to 5 minutes. Don’t over cook them.
* Add chicken/vegetable stock to the mushrooms, cook them for 10 to 15 minutes and cool it.
* Make a puree of the mushrooms in a blender and return it to the pan.
* Blend corn flour with a little milk to make a paste. Pour this paste into the pan over the pureed mushrooms and stir well. Add remaining milk and keep stirring constantly, until soup thickens.
* Add cream to it, salt and pepper to taste.
* Garnish with parsley or coriander as per taste.
* Serve hot along with garlic bread made of sourdough and garlic butter or dinner rolls.
