Chocolate Oil Cake

INGREDIENTS
175g- flour
3tbsp- cocoa powder
2tsp- baking powder
1 pinch of Salt
220g-caster Sugar
¾-cup- Milk
¾-cup- Oil
2- eggs
2tsp- vanilla essence

METHOD
Preheat oven to 180c, Gas mark 4.
Line a 20cm round cake pan with the baking paper. Grease with butter and then dust it with the flour.
Sift together the Flour, Baking powder & salt.
Add Sugar to the above flour mixture and mix it well.
In a bowl with an electric mixer at slow speed mix eggs, oil, milk and vanilla essence then add the Flour mixture to it, mix everything together until smooth.
If the batter is too runny you may add slightly more Flour.
Pour the mixture into the baking pan and bake for approximately 40 to 45 minutes or until the skewer comes out clean.

CHOCOLATE BUTTER ICING
3tbsp- butter
3cups- powder Sugar
½-cup- cocoa powder
1tsp- vanilla essence
METHOD
Using an electric mixer, cream the butter with powdered sugar in a bowl. Add cocoa powder, vanilla essence and mix until smooth. Do not over mix.
Cover the baked cake top and the sides with the icing.
TIP
Don’t open the oven door too often during cooking. The temperature will drop and may prevent the cake rising properly.
